Irish fighting legend Conor McGregor is one of the greatest UFC (Ultimate Fighting Championship) competitors in history; the first competitor to hold titles in two different weight classes simultaneously. His love of whiskey led him to create his own brand in 2018.
Proper No. 12 is a solid representation of the mark and represents great value following in the footsteps of Jameson and Bushmills. I present to our dear readers two cocktails using Proper No. 12. This one is called Proper Peaches. Enjoy!
Proper Peaches

- 1 Boston Shaker
- 1 Muddling Stick
- 1 Mason Jar Glass
Ingredients
- 2 ounces Proper No. 12 Irish Whiskey
- 1/2 ounce Simple Syrup
- 1 Peach Diced
- 3-4 leaves Mint
- 1 splash Soda Water
Instructions
- Muddle the diced peach, simple syrup, and mint leaves in a Boston Shaker.
- Add the whiskey and ice cubes to the shaker.
- Shake vigorously for ten seconds.
- Strain into a mason-style jar over fresh ice.
- Add a splash of soda water.
- Garnish with sprig of mint.
My Take
While I didn’t see it mentioned in the official tasting notes for Proper No. 12, I detected mint on the nose right out of the gate. Thus, it made perfect sense to use this whiskey in this southern classic cocktail. Normally, a strong bourbon works best, but I was surprised at how much I liked the No. 12 here. The mint really comes through and if anything is the star of the show. Really great riff on a classic.
