How rare is the newest expression of Eagle Rare? How does 25 years old sound? Buffalo Trace announced Eagle Rare 25 this week, calling it an “ultra-aged bourbon.” It is the oldest bourbon released in the Eagle Rare collection.

And if that isn’t enough to get your bourbon-collector-sense tingling, consider that it’s from the distillery’s Warehouse P, part of a $20-million experimental program. That’s where the folks in Frankfort are doing some major trials in the world of aging and maturation of their whiskeys.

“Eagle Rare 25 defies the conventional limits of typical bourbon aging,” said Buffalo Trace Distillery Master Distiller Harlen Wheatley. “When crafting whiskey in conditions like those we experience in Kentucky, two reactions happen over time: more liquid is lost due to evaporation – also known as angel’s share – and extraction of flavors from the barrel becomes more intense, often leading older whiskeys to taste over-oaked, astringent, and dry. The unique set of aging conditions in Warehouse P has allowed us to create a 25-year-old bourbon that smooths out the extractions and highlights the desirable flavors found in ultra-aged American whiskey products.”

Of course, time in the barrel costs money. Only 200 750 ml bottles will be offered with an SRP of $10,000.
