KittiePIG Pit Burger

KittiePIG Pit Burger

Ingredients
  

  • 2 lbs Ground Beef 20% fat
  • 1 cup KittiePIG Bacon-Onion Jam
  • 4 buns Brioche Hamburger Buns
  • 8 slices Cheese Slices I used American slices
  • Brown Mustard
  • Little Gem or Butter Lettuce
  • Salt & Pepper

Instructions
 

  • Form ground beef into 8 patties, 1/4lb each, salt and pepper both sides of patties.
  • Bring flat grill or heavy frying pan to medium-high heat.
  • Have a flat weighty ready to “smash” the burger patties. I used a saucepan.
  • Add 1 tbsp vegetable oil or bacon fat, and place patties down to cook.
  • Wait one minute and press the patties down to flatten, continue cooking for 2-3 minutes, then flip.
  • After about one minute, smash the second side, and continue cooking until desired doneness.
  • Add the cheese slice about one minute before removing the patties from the grill.
  • Set patties aside, turn the heat down to medium, then toast the buns in the hamburger drippings.
  • Slather mustard on both buns, place lettuce down first, then the double stack of hamburger patties.
  • Top with slices of onion, and then a big scoop of Bacon-Onion Jam, and dig in!

Bacon-Onion Jam

Ingredients
  

  • 1 lb Thick Cut Bacon sliced
  • 1 large Yellow Onion
  • 6 oz Blackberries
  • 2 cloves Garlic minced
  • 1/4 cup Balsamic Vinegar
  • 1/4 cup Brown Sugar
  • 1/2 cup Scotch
  • 1 tsp Vanilla Extract
  • 1 tsp Salt

Instructions
 

  • Cut bacon across the width into ¼ inch wide pieces.
  • Heat a heavy frying pan to medium-high.
  • Add 1 tbsp vegetable oil and cook bacon till crispy.
  • Strain out bacon, and reserve bacon fat.
  • Place the pan back onto medium-high heat and add 1 tbsp of the bacon fat.
  • Sautee the onions and blackberries until onions are translucent, about 7-8 minutes.
  • Reduce heat to medium, add cooked bacon, minced garlic, balsamic vinegar, brown sugar,
  • Scotch, vanilla and salt, and cook until the liquid is absorbed, and the sauce thickens, about 5 minutes.
  • Scoop it onto your burgers! If you have any left, refrigerate in an airtight container.
