Georgetown, Kentucky, just outside of Lexington, is one of those places where you can’t visit without hearing about whiskey. It is in the very heart of bourbon country. Nestled into the countryside here is LF Heritage Distilling Company, a family owned and operated distillery which was built on the family cattle farm, going all the way back to 1897, five generations ago.
The distillery was founded by Darin Dillow and his wife, Bethany. Among his many skills, Darin is the Master Distiller with a Master’s Degree in Production Management and a Ph. D. in chemical engineering. Their son, Andrew works as a blender.

I was able to speak with Tom Morrow, the National Brand Ambassador for the distillery. “Everyone in Kentucky is either in horses or whiskey,” Tom tells me. He notes that it was Kentucky history that attracted the Dillow family into starting a distillery. Count me as one who is glad that they chose whiskey and not horses. Tom is a high-energy type of guy who is very exited about this brand and the upcoming developments.
At present, LF Heritage Distilling Company is sourcing and blending Kentucky whiskey, offering six expressions now, using six-year-aged or older product. The distillery also offers contract bottling through LF Heritage Spirits Group.

I sampled all of these high-quality expressions, both neat and over ice. What I learned is that we can certainly have confidence that the Dillow family is delivering on flavor. From nose to finish, everything about this collection of expressions is classic Kentucky whiskey; the richness of the mouthfeel, the depth and complexity of flavors, and the polished delivery. All were consistent between the six of them. These expressions are aimed at the premium market, and with very good reason. They are available now in 13 states and through Bourbon Outfitters online.
By the end of 2025, LF Heritage Distilling Co. will be distilling their own whiskey with the addition of four 2500 gallon copper pot stills. But the Dillow family is not about to stop there. They have plans to create a destination experience for visitors at the distillery complete with a hotel, housing, and a 4000-seat amphitheater all on site by the end of 2027.
