Course Cocktails

Equipment

  • 1 Cocktail shaker
  • 1 Highball Glass or Tiki Mug

Ingredients
  

  • 2 1/4 oz Empress Elderflower Rose Gin
  • 1/4 oz falernum `
  • 3/4 oz golden beet shrub
  • 1/4 oz lemon juice
  • 1/4 oz simple syrup
  • 2 dashes saffron tea concentrate
  • grapefruit peel garnish
  • maraschino cherry garnish
  • mint leaves garnish

Instructions
 

  • Add all ingredients to a cocktail shaker with ice, and shake it baby.
  • Strain into a fun highball glass or tiki mug filled with crushed ice.
  • Garnish with a grapefruit peel holding a maraschino “spot” and mint leaves.

Golden Beet Shrub

Course Syrups and Garnishes

Equipment

  • Aluminum Foil
  • 2 Airtight Containers

Ingredients
  

  • 1 whole medium to large golden beet
  • 1/2 cup cane sugar
  • 1/4 cup white wine vinegar

Instructions
 

  • Wrap beet in aluminum foil and place in a 350-degree oven for 1 hour.
  • Let cool and peel off skin. Dice into ¼” squares (this should yield about 1 cup of roasted beets).
  • Place beets in an airtight container with the cane sugar, stir to incorporate.
  • Let rest on the counter or in the refrigerator for 2-3 days, stirring daily.
  • Strain into a new container, and then pour the vinegar through the beet mixture into the same new container.
  • Stir to incorporate, and chill to use in cocktails.

Saffron Tea Concentrate

Equipment

  • 1 Small Bowl

Ingredients
  

  • 10 threads saffron
  • 2 tbsp boiling water

Instructions
 

  • Place saffron in a small bowl.
  • Add 2 tablespoons boiling water and let steep for 10 minutes.
  • Strain out the saffron threads and chill for use.
