Dragon’s Breath

A cocktail inspired by the esoteric sounds of Josh Hatton’s band, Kimono Draggin.’ Naturally, I reached for Japanese ingredients, and drew a little outside the box here, by using furikake in this recipe. If you are unfamiliar with furikake, it’s basically the Japanese version of Everything Salt. It is aromatic and addicting, with a light crunchy texture, and strong umami flavors. Typical furikake ingredients are sesame seeds, nori (seaweed), salt, sugar, and dried fish or eggs. Much like its North American cousin, it can be sprinkled on everything, especially over ramen, rice, or even popcorn.

Next, you will reach for your favorite Japanese whisky, and some Yuzu Liqueur. A little soy sauce to act as your bitters, and a very simple furikake syrup to incorporate the dry ingredient blend. You can add some heat if you like, by using a wasabi furikake blend, or adding a dash of Sriracha Sauce. Rimming the glass with the furikake blend is a key step, as you will inhale those aromatics with each sip of this cocktail. Kanpai!

Equipment

  • Jigger
  • Cocktail Mixing Glass
  • Hawthorne Strainer
  • Saucepan
  • Fine Mesh Strainer
  • Airtight Container

Ingredients
  

  • 2 oz Japanese Whisky (90 proof or higher)
  • 0.75 oz Yuzu Liqueur
  • 0.5 OZ Furikake Syrup
  • 1 light bar spoon Soy Sauce
  • Rim glass with furikake

Instructions
 

  • Pour a small pile of furikake into a shallow dish
  • Brush a square of furikake syrup onto the side of a rocks glass
  • Roll the brushed syrup into the furikake blend, then add a large ice cube
  • Add all cocktail ingredients to an empty cocktail mixing glass
  • Add ice and stir until well chilled
  • Strain into the rimmed glass

Furikake Syrup

Ingredients
  

  • 1/4 cup Furikake (I used a wasabi furikake blend)
  • 3/4 cup Granulated Sugar
  • 1 cup Water

Instructions
 

  • In a saucepan, bring furikake and water to a simmer over medium heat
  • Reduce heat to medium-low, and simmer for 5 minutes
  • Add sugar and still till dissolved
  • Remove from heat and fine mesh strain into an air tight container
  • Cool for use in cocktails, and store in the refrigerator
