750mlVodka (or 100 proof clear neutral spirit, see tips below)
2lbsRipe Lemons, zested
3ozRich Simple Syrup (2:1 sugar to water)
2ozHoney Syrup (1:1honey to water)
1tspVanilla Extract (optional)
Instructions
Pour vodka (or 100p spirit) and lemon zest into an airtight container
Let rest on the counter for 24 hours
Fine mesh strain mixture into an airtight container
Add rich simple syrup, honey syrup and vanilla extract
Store in refrigerator
Notes
TIPSI like to use a higher proof spirit to extract more of the lemon essence. I typically use half Vodka (80 proof), and half Everclear 120 proof). Be sure to squeeze the zested lemons for fresh juice to use in your cocktails.
