Pana Banana

Equipment

  • Mixing Glass
  • Strainer
  • Torch
  • Skewer

Ingredients
  

  • 1 oz Diplomatico Reserva Exclusiva Rum
  • 1 oz Bourbon
  • 0.5 oz Cream de Banana Liqueur
  • 0.25 oz Sweet Vermouth (I used Dubonnet)
  • 3-4 dashes Citrus Bitters (I used 10 drops of Bleeding Heart Calamansi Bitters)
  • 2 drops Saline (4:1 ratio, water to salt)
  • Nutmeg (Grated or powdered)
  • Banana Slice (Brûléed for garnish)

Instructions
 

  • Add all ingredients to a mixing glass with ice and stir vigorously for 20 seconds
  • Double strain over a large cube
  • Roll the banana slice in demerara or granulated sugar, then skewer it
  • With a chef torch brûlée/torch the skewered banana slice
  • Garnish cocktail with Brûléed banana slice
  • Grate (or sprinkle) nutmeg over the top
