- Mixing Glass
- Champagne flute
- Coupe Glass optional
Ingredients
- 2.5 oz Brut Champagne
- 1 oz Bourbon
- .75 oz Pineapple juice
- .75 oz Cinnamon syrup
- 2 dashes Angostura bitters
- 1 sprig Rosemary for garnish
Instructions
- Add bourbon, pineapple juice, cinnamon syrup, and bitters to a cocktail mixing glass, and stir to incorporate.
- Pour into a champagne flute or coupe glass
- Top with Champagne
- Garnish with the sprig of rosemary

Cinnamon Syrup

Equipment
- Small Saucepan
Ingredients
- 1/2 cup Cane Sugar
- 1/2 cup Water
- 1/2 stick Cinnamon
Instructions
- In a small saucepan, bring water and sugar to a simmer
- Remove from heat, and add the half cinnamonstick.
- Let rest for 10 minutes, then remove cinnamon stick and bring to room temperature or chill, for use in cocktails.
