Texas ‘Cue

Which state produces the best BBQ? That’s not really a fair question. Everyone can agree that the meat should have a pleasant smoke, be ridiculously tender, and make you drool just thinking about it.  I have to appreciate the purest methods in Texas, as they let the meat do all the talking, with minimal seasoning, and no sauce mop. However, being a sauce girl myself, I can always add some at the table, just not too much if the Pitmaster is watching me.

Now for the perfect cocktail to inspire your inner Pitmaster. We must start with a classic Texas born Whiskey from Ironroot Republic Distilling. The 90 proof Assemblage Straight Bourbon stands up strong with classic Texas BBQ meal flavors of roasted corn, smoked peppers and sweet tea. Hey, this cocktail recipe practically wrote itself, let’s use these ingredients in our glass.

Texas 'Cue

Equipment

  • Jigger
  • Cocktail Mixing Glass
  • Hawthorne Strainer
  • Cocktail smoker
  • Blender
  • Fine Mesh Strainer
  • Airtight Container

Ingredients
  

  • 2 oz Ironroot Assemblage Straight Bourbon
  • 1 oz Roasted Corn Juice
  • 0.75 oz Chili Liqueur (Green or Red, both are delicious)
  • 0.25 oz Agave Syrup
  • 4 drops Saline (4:1, water tosalt)
  • Whole peppercorns and hickory smoking chips for smoking the cocktail
  • Garnish with grilled peppers and/or BBQ meat

Instructions
 

  • Add all cocktail ingredients to a cocktail mixing glass
  • Add ice and still till well chilled
  • Strain into a rocks glass over fresh ice
  • Smoke cocktail with peppercorns and hickory wood
  • Garnish and enjoy!

Notes

If you don’t have a clever little cocktail smoker top, don’t worry. You can just pile up the peppercorns and hickory on a flame safe surface, light it with a torch, and rest your empty glass upside down on top of it for 20 seconds, then continue with adding ice and the cocktail.

Corn Juice

Ingredients
  

  • 1 ear, large Fresh Roasted Corn, in husk
  • 1 cup Water

Instructions
 

  • Set oven to 350 degrees
  • Place whole ear of corn, with husk intact on the center rack
  • Roast for 30 minutes
  • Remove from oven and let rest until cool enough to handle
  • Peel off husk and silk, then cut off all of all of the kernels
  • Place corn kernels and water in a blender, and blend till smooth
  • Fine mesh strain into an airtight container

Notes

Feel free to roast your corn on the BBQ, or buy frozen roasted corn kernels if available at your local grocer.
